About the Role
As the Head Chef, you will be responsible for overseeing the culinary operations of lodge, focusing on menu development, food quality, and kitchen management. This role demands a creative leader who can inspire a team while ensuring excellence in every dish served.
Key Responsibilities
– Develop and plan seasonal menus, ensuring innovative and appealing dishes that reflect current culinary trends.
– Manage kitchen operations, including inventory control, food sourcing, and cost management, while adhering to budget guidelines.
– Train, mentor, and supervise kitchen staff to foster a collaborative and high-performing team environment.
– Maintain the highest standards of food safety and sanitation in compliance with health regulations.
– Collaborate with management to create special events and customize menu offerings for various occasions.
– Monitor food quality and presentation, ensuring all dishes meet our establishment’s standards before service.
– Implement and oversee standard operating procedures to optimize kitchen efficiency and workflow.
– Engage with guests to receive feedback and enhance the dining experience based on their preferences.
Requirements
– Proven track record in a culinary leadership role within a busy kitchen environment.
– Demonstrable experience in menu creation and food costing, with a strong understanding of nutrition and dietary restrictions.
– Strong leadership skills with the ability to motivate and inspire a diverse team.
– Excellent organizational and time management abilities, with a clear focus on detail.
– Knowledge of food safety guidelines and health regulations in South Africa.
– Creative problem-solving skills with a passion for developing new culinary concepts.
Preferred Qualifications
– Culinary diploma from a recognized institution.
– Experience in high-volume food service or catering environments.
– Familiarity with modern cooking techniques and cuisine styles.
– Previous experience working with local suppliers and understanding of seasonal produce.
